Die Auswertung der allgemeinen statistishen Verbrauchszahlen laBt uber einen Zeitraum von 1935/38 bis 1951/52 gewisse Grundtendenzen der deutschen Ernahrung erkennen. Der Verzehr von Brot und Kartoffeln ist stetig im Abnehmen begriffen. Bei nirdrigen Werten fur Gemiise und Obst sowie auch fur Milch ergibt sich somit eine Fett/EiweiD-Kost, deren Haupttrager Fleisch sowie pflanzliche und tierische Fette sind. Auf die ernahrungsphysiologischen Konsequenzen aus dieser Strukturwandlung sol1 in weiteren Arbeiten eingegangen werden. Structural Changes in the nutrition of the German people from 1935 till 1952
The analysis of the general statistical consumption-figures shows for the period from 1935/48 till 1951/52 certain fundamental tendencies of the German nutrition. Consumption of bread and potatoes is steadily declining. With low figures for vegetables, fruit and milk, a fat/protein dict results, consisting mainly of meat and animal and vegetable fats. The food physiological consequences of this structural change will be dealt with in subsequent papers.
