Abstract
The velocity of the spliting off of NPN (Non Protein Nitrogen soluble in 12% trichloroacetic acid) from cow milk casein by various proteolytic enzymes at 30° and at neutral pH has been investigated. The enzymes were crystalline pepsin, crystalline chymotrypsin, crystalline trypsin, purified mold protease, commercial papain and, for comparison, rennin. The substrates were skim milk, sodium caseinate and calcium caseinate solutions.
