Saccharornyces cerevisiae ATCC 39859 was immobilized onto small cubes of wood to produce ethanol and very enriched fructose syrup from glucoselfructose mixtures through the selective fermentation of glucose. A maximum ethanol productivity of 21.9 g 11. h was attained from a feed containing 9.7% (w/v
