Abstract

The effect of moisture level and lying time on the milling behaviour of a number of Australian wheat varieties was investigated. Significant differences were noted in the time required to reach optimum milling performance and this was also dependent on the level of water addition. Possible explanations for this behaviour include variations in the rate of penetration of added moisture and the condition of the aleurone/sub‐aleurone interface.
