Abstract
Fruits of Sambucus nigra L. and Sambucus ebulus L. are known by high content of anthocyanine pigments. Hence, these fruits are possible sources of natural pigments because of the limited use of some synthetic foodstuff pigments. The mentioned fruits also include additional components important in terms of nutrition, thus the chance of utilizing the fruits or juices in the foodstuff industry is given here [1, 2].
The chemical composition has been studied recently especially of Sambucus nigra, to a lesser degree of Sambucus ebulus. Recently we have studied the presence of amino acids in both fruits and juice [3] and the presence of lower fatty acids [4]. In this paper the composition and concentration of organic acids, determined by capillary isotachophoresis, are presented.
