The seeds contain a b o u t 34% piotein a n d 1 X % oil'-". The oil has palatable t'lavour and resemble with mustard oil in appearance' while the fatty acid profile is similar to soybean m d peanut o i l ' . The o i l contains about 71 7;) unsaturated fatty acid with major compo\ition of olcic acid (C1Y:l) and linoleic acid (C18:2). The C18:l is very suitable t o cooking and salad and C1S:2 is beneficial in lowering the blood cholestdrol in human system. The studies made so far on oil and fatty acid profile in winged bcan are based either on bulk population"^' o r o n very limited genotypes' '. The present study was, therefore, undertaken on large and genetically improved genotypes to isolate cultivars with desired/altered fatty acid composition a n d further t o confirm the presence o f parinaric acid (ClX:4). an a n t inutritional factor, i n winged bean'.

M a t e r i a l s a n d M e t h o d s

A laree population o f different eco-geographical origin' was subjected to selection for pure line genotypes during 1986-87 to 1988-89. Among these 19 distinct genotypes (Table ) were selected on the basis of different morphological a n d economical traits and werc grown in randomised block design with three replications in lY89- 90 undcr normal cultural conditions at National Rotanical Research Institute.
