MCM-41 Materials as Catalysts for the Synthesis of Alkyl Fructosides. -MCM-41 is an excellent catalyst for the alkylation of fructose (I) with short chain alcohols, e.g. (II), at the anomeric position. For long chain and fatty alcohols, e.g. (VI), yields are moderate but the alkyl fructopyranosides
