## Abstract The extraction at natural pH of carbohydrate polymers from __Opuntia ficus‐indica__ and their physicochemical characterization are reported. Polysaccharides extracted from nopal pulp, nopal peel and pear peel, are denoted NPU, NPE and PPE respectively. For comparison, extraction of the
