S ZIAJKA and Z ZRIKOWSKI Outstanding infant formula milks are very similar in their chemical composition and nutritional value to human milk. Many research works tend also towards the improvement of the bifidogenic properties of infant formula milk. It can be done by introducting substances which stimulate the growth of Bifidobacteriuni blficlutit in the infant intestinal tract. Among those substances hydrolysed casein, lactulose, lysozyme and carrot juice are considered [2,4]. The purpose of this work has been to determine some properties of infant formula milk with the addition of enzymatically digested casein as a source of bifidus factor, Two samples of infant milk formulae with the addition of casein enzymatically digested by means of pepsin and papain and one control sample were made. Then in obtained infant milk formula samples the following properties were determined: flavour in reconstituted milk, some chemical and physical properties [I], ability
