## Abstract The effect of ovenβdrying on the reducing and nonβreducing sugars and on fructosan in asparagus, kale leaves and in five herbage grasses has been investigated. Values for total sugars in the dried material mere lower than in the fresh, while fructosan was higher in the dried samples.
