β¦ Synopsis
Classical alkaline refining of liquid vegetable oils removes free fatty acids, phospholipids, metals, oxidized components and (off-)flavours by a number of stages. This process is relatively expensive and produces effluent. Physical refining avoids the alkaline neutralisation step and therefore phospholipids and metals have to be removed by other means, e.g. by adsorbents. The principles of this adsorption are discussed and it is shown that physical refining applying silica to remove phospholipids is technically feasible, even when water-degummed oils are treated.
