The water-soluble solvent dimethylsulfoxide proved to be inhibitory to the enzymatic glucosylation of crocetin catalyzed by cell-free extracts of saffron (Crocus sariv~s L.) callus cultures. This problem was circumvented by encapsulating crocetin into maltosyl-P-cyclodextrin at a 1:3 and a 1:6 ratio
