The kinetics o f acetic acid p r o d u c t i o n b y liq u i d -s u r f a c e cultures o f Acetobacter aceti strain M7 was investigated. Specific rates o f acetic acid p r o d u c t i o n (qpl, g acetic a c i d / c m 2 m i c r o b i a l film per hour), e t h a n o l c o n s u m p t i o n a n d o x y g e n u p t a k e were estimated on the basis o f l i q u i d -s u r f a c e area: these were virtually constant, irrespective o f the thickness o f the m i c r o b i a l film. The effect o f acetic acid c o n c e n t r a t i o n (P) on qpf was f o u n d to be e x p r e s s e d from a series o f experiments, as follows: qpf= 0.0227(1 -P / 9 3 ) 2"2Β°4. A simple m a t h e m a tical m o d e l was p r o p o s e d to describe quantitatively the acetic acid p r o d u c t i o n rate as a function o f specific surface area a n d d i l u t i o n rate. The m a t h e m a t i c a l m o d e l could r e a s o n a b l y well a p p r o x i m a t e to e x p e r i m e n t a l d a t a in the literature. The o x y g e n transfer rate t h r o u g h the air-liquid interface o f a reactor in the presence o f a m i c r o b i a l film was 3.6 times larger t h a n that in the absence o f the m i c r o b i a l film.
