how much diglycerides that is needed to get enough stabilization of the p'-form. It seems likely that 1.0 Yo diglyceride or less is a realistic niveau. The time before the p-form is developed could then be prolonged 2-3 times.
Since the diglycerides are saturated they contribute more than the exchanged LOBRA 40 to the solid phase, but if the amount added is less than 1 o/o contribution is neglectable.
The diglyceride used in this experiment contains about 26 Yo triglycerides, which also contributes to the solid phase but without having any delaying effect on the p'+ p transition. If diglycerides should be used as a P'-stabilizer it would be better to use a sample that is purer without that much tri-glycerides. The p'-stabilizing effect is also dependent on chain length of the fatty acids in the diglycerides as well as in which form (rac 12, sm-12 or 1,3) the diglycerides are'. What is of technical relevance is something that must be tested and optimized.
