Polyenic fatty acids, phospholipids and antioxidants and their importance for biological functions and health is an area which will be studied intensively by the newly founded Institute of Human Nutrition in Potsdam-Rehbrucke. To promote these and other scientific activities of this institute workshops have been sponsored by the Ministry of Science and Technology of the Federal Republic of Germany.
Internationally renowned experts reviewed and discussed recent findings with regard to polyenic fatty acids, phospholipids and antioxidants. The participants found the. workshop very useful and informative. Because the contributions are generally interesting the complete abstracts are presented here. More detailed information can be obtained from the authors directly whom we once again sincerely thank for their valuable contributions.
