Vitamin (\mathrm{C}) and (\alpha) - and (\beta)-carotene contents were determined in domestic and imported vegetables consumed in Finland during 1988-1989 and 1992-1993. Vitamin C contents in vegetables of domestic or imported origin varied considerably and seasonal variation was also high. Vitamin (C) contents were highest in yellow and red sweet peppers and cauliflower and lowest in lettuce. Contents of (\alpha) - and (\beta)-carotene were highest in carrots and tomatoes. c 1994 Academic Press. Inc.
