A series of samples of carboxymethyl wheat starch was prepared by treating the starch 1% ith varying amounts of chloroacetic acid and sodium hydroxide. Two different procedures were employed, giving products having intact granules and dispersed granules respectively, the degree of substitution being measured by titration. Viscosities of i%queous pastes of the products were measured with a Brookfield rotational viscometer. The high viscosity of sodium carboxymethyl starch paste was greatly depressed in presence of added sodium chloride, or on conversion to the free acid form. Similar products were obtained from stabilised wheat flour.

Zwammenf assung Eine Reihe von Probeti carboxymethylierter Weizenstiirke wurde durch Behandlung der Xtarke mit unterschiedlichen Mengerb a n Chloressigsaure und Natriumh ydroxid hergestellt. Es wurden zujei verschiedene Verfahren angewandt, die zu Produkten wit intaktm Kiir- wern und dispergierten Kornern fuhrten, dereih Substitufionsgrad durch l'itration ermittelt wurde. Die Viscositat wii@riger Kleister der Produkte wurde jmittels eines Brook field-Rotationsuiskometers gemessen. Die hohe Vis-Eositat von Natriumcarbozymethylstarke-Kleister wurde bei Anwesenheit von hinxuyefugtem Natriumchlorid oder durch Konvertierung in die freie Rtiureform weitqehend herabgesetzt. Bhnliche Produkte wurden aus stabilisiertem Weizenmehl erhdten.
