✦ Synopsis
Certain trace elements have been shown to be essential growth factors to microorganisms. A minimum concentration of zinc has been considered necessary to obtain optimal fermentation rate by brewer's yeast, but interactions between zinc and other elements have also been discussed.
Cluster analyses were performed with trace element data from 24 different yeast samples. The element compositions of the obtained yeast prototypes indicated an interaction between copper and zinc, as well as an essential effect of manganese for one yeast strain. The results further supported that the trace element level in yeast shows less fluctuations than the element concentration in the worts.
