## Abstract **Summary:** Mesquite gum sourced from __Prosopis velutina__ trees and gum arabic (__Acacia__ spp.) were characterized using light scattering and Langmuir isotherms. Both gum materials were fractionated by hydrophobic interaction chromatography, yielding four fractions for both gums: FI
