The oxidation of a broad collection of commercial edible oils, including extra virgin olive, olive, sesame, sunΒ―ower, corn, unknown seed, soybean, safΒ―ower, rapeseed, peanut and walnut oils, was monitored by Fourier transform infrared spectroscopy.
