✦ Synopsis
The purpose of this study was t o assess t h e effect o f f a t content in food and the contact time on the extent o f migration o f plasticizers from cling film during microwave heating. Simulation studies found t h a t migration increased exponentially with the f a t content in food. Several types o f cheese w i t h different f a t contents were chosen as t h e representative food. Ham slices were also allowed t o remain in direct contact with the cling film after microwave heating when the t o t a l amount o f plasticizer migrated was increased by N 60% after direct contact f o r 10min or more after microwave heating.
