Die Ukonomie des Verfahrens wird untersucht. Die Zuckergewinnung aus den Knollen ist etwas teurer als die Saccharosegewinnung aus Ruben. Die Hauptschwierigkeit liegt in dem hohen Prcis der Topinamburknollen, fur die durchweg der Kartoffelpreis gefordert wird. Die Steuerpflichtigkeit des Sirups wird diskutiert. Summary 1. T h e results of tuber analysis in various seasons are given. In most cases the dry matter and carbohydrate content are lowered during the winter (figure 12); the mean valrres decrease from 17QIo carbohydrate in arrtumn to 15 Qlo in springtime. Opposite to former opinions the value of reducing sugars (" Praexistierende Zucker") remains small at 0,1-1,0 0111 in the tubers. 3. T h e reco-;ery of all c d o h y d r a t e s of the tubers as a sirup is studied particularly. T h e best procedure for this recovery is to extract the juice from dried cossettes at 35-4OoC under Addition of sulfur dioxyde. T h e purification of juice is then possible by simple filtrating over activated coal and desalting Ly ion exchangers. T h e final
product will be a pure sirup with 70-80 OIo fructose and 20-30 elo glucose on carbohydrates.

T h e economy of the procedure is discitssect. T h e production of sirgars from the tubers is more expensive than this of sucrose from beets. T h e main point is the high price of the tubers which are otered ordinarily at the same price as potatos. T h e liability of the sirup to be taxed is also discussed.
