โœฆ Synopsis

A regular solution theory extended to a system with three components of different molecular sizes is used to derive parameters which can be related to the interaction between molecules in mixed adsorbed films at the water/air interface. The theory has been verified for the mixed system of aniline/p-chlorophenol/water. (1993 Academic Press. Inc.

## Abstract The intrinsic surface activity of the contractile protein actin has been determined from surface tension measurements using the Wilhelmy hangingโ€plate method. Actin, a very soluble protein, moves from the subphase to the airโ€water interface to make a film. In the absence of magnesium, a

An apparatus used to study air/water interfacial surface viscoelasticity through longitudinal waves is described. The longitudinal surface waves are generated by an oscillating barrier driven by a small DC motor and detected with a capillary wave. The damping coefficient and the wavenumber of the lo

## Abstract There is an ongoing debate about whether a protein surface film at an airโ€“water interface can be regarded as a gelled layer. There is literature reporting that such films show macroscopic fracture behavior and a rheology comparable to threeโ€dimensional protein bulkโ€networks. Ifthis is t

Gelation of gelatin under various conditions has been followed by atomic force microscopy (AFM) with the objective of understanding more fully the structure formed during the gelation process. AFM images were obtained of the structures formed from both the bulk sol and in surface films during the on
