Structure of platyconin is determined to be 3-O-(6-O-(a-L-rhamnopyranosyl) -B-D-glucopyranosyl) -7-O-(6-O-(trans-4-0-(6-O-(trans-4-0-(B-D-glucopyranosyl) caffeoyl) -B-D-glucopyranosyl)caffeoyl) -B-D-glucopyranosyl) delphinidin. Acylated anthocyanins having more than one acyl group have unusually good stability 1.2 in neutral and weakly acidic aqueous solutions, in which usual anthocyanins are mostly hydrated '
