✦ Synopsis

The conversion of curcumin by soybean lipoxygenase leads to three stereoisomers of 2-[(4 0 -hydroxy-3 0 -methoxy)phenoxy]-4-(4 00 -hydroxy-3 00 -methoxy-(phenyl)-8-hydroxy-6-oxo-3-oxabicyclo[3.3.0]-7-octene. Their structures and conformational behaviour were elucidated by various 1 H and 13 C NMR methods and high-performance liquid chromatography-electrospray ionization tandem mass spectrometry.
