Abstract
Starch gel electrophoresis has been used to separate the proteins of muscle sarcoplasm (waterβsoluble proteins). Distinct species differences have been observed between the proteins of pork, beef, veal, mutton and lamb and rabbit. The species can be identified as a result of these differences.
