In 1977, Sugimura et aL6 and Nagao et al.,7 pioneers in the discovery of HAS in cooked foods, reported that the well done portions of broiled fish and beefsteak, and the smoke that arose during cooking, contained highly mutagenic substances that could not be accounted for
