โœฆ Synopsis


Nordin et al. has been published in which the authors provide evidence for the radial arrangement of starch molecules in the granules of waxy maize and potato (Starke, 22, 1970, 256-260). It is further suggested that the non-reducing ends of the molecules are located at the surface. Such an arrangement in the starch granules of wheat would be entirely compatible with the observations on the a-amylase and glucoamylase attack described above.
