โฆ Synopsis
Hamilton C ? Ruthven: Mercury Content of Seed Potatoes and biceps femoris, when constrained from shortening during rigor, fall within the same fairly narrow range (about 20 Ib/in2). The total connective tissue contents of these muscles are respectively 6.0, 5 ' 0 and 4 . 3 % DFFS, but of this connective tissue 33% or more is elastin in the latissimus and semitendinosus, whereas in the biceps only 2 . 7 % is elastin. Hence it seems that elastin has an effect similar to that of denatured collagen on the toughness of cooked meat.
Acknowledgements
The author wishes to acknowledge with gratitude the invaluable technical assistance of Mr. C. C. Ketteridge who carried out all the painstaking analyses required in the work. He also wishes to thank Mr. C. A. Voyle for making available the photographs of cross-sections of muscles, and Mr. L. IF. Elsden for carrying out the amino-acid analysis of elastin, and for providing a comparable analysis of ligamentum nuchae elastin.
