Hamilton C ? Ruthven: Mercury Content of Seed Potatoes and biceps femoris, when constrained from shortening during rigor, fall within the same fairly narrow range (about 20 Ib/in2). The total connective tissue contents of these muscles are respectively 6.0, 5 ' 0 and 4 . 3 % DFFS, but of this connective tissue 33% or more is elastin in the latissimus and semitendinosus, whereas in the biceps only 2 . 7 % is elastin. Hence it seems that elastin has an effect similar to that of denatured collagen on the toughness of cooked meat.
