Abstract
Evidence is presented that the protein values of most human diets are limited by their content of the sulphur aminoβacids and a chemical method is proposed for the measurement of nutritive, value based on sulphur (S) and nitrogen (N) contents. It is shown that for practical purposes the protein scores of mixed diets are equal to 1000 S/N and thus net dietaryβprotein values may be estimated for natural mixed diets by simple chemical procedures.
