Cellulose conversion into food source possible: Ezaki Glico

For the first time, amylase, an ingredient of edible starch, has been produced from cellulose. Five specific enzymes are used by Ezaki Glico for the conversion. Global cellulose production is estimated at 100 bn tonne/y and work has been carried out for its conversion to ethanol as a source of biomass.
