The authors discuss briefly the structure of proteins and chemical interactions with other macromolecules with. respect to food processing, storage, and consumption.
As in the first volume, each of the 53 articles is highly organized to provide an easy access of information: It begins with an outline of the article, a glossary and a brief introduction. It ends with a summary or perspectives, a short list of connected articles, and a brief bibliography for further reading. Numerous tables and figures are included. Eight colour plates located in the middle of the book give an impression of receptor signaling systems into cells, the three-dimensional structure of a growth factor, automatic sequencing, histochemical stainings of tissue sections, and chromosome stainings with various fluorescent dyes. The high scientific standard is guaranted by authors and an advisory board of international reputation.
