✦ Synopsis
Canned single-strength grapefruit juice samples were collected biweekly from the main producing plant in Cuba during the 1980-81 to 1983--84 seasons. They were analyzed for "Brix, acid, naringin and limonin content and evaluated for sensory quality. Average values for each quality factor vary from season to season. Better sensory quality was found in samples with high Brix/acid ratio and lower bitter compounds content.
No correlation relationship was found between Brix, Brix/acid ratio, naringin and limonin. The first 3 are the main quality factors related to grapefruit juice flavour.
