Abstract
A method was developed, which makes it possible to evaluate in a liquid multicomponent‐system the value of specific volumes of a component, by variation of the density of the solution caused by the variation of the concentration of this component.
In particular, in the system H~2~O‐protein‐sucrose the dependence of the partial specific volume of lysozyme and papain was studied on the concentration of proteins in the range of 0 to 10 wt.‐% and on the concentration of sucrose in the range of 0 to 50 wt.‐%.
For both proteins no dependence of the partial specific volume of the protein on the concentration of the protein, but an increase of the partial specific volume with increasing concentration of sucrose could be observed.
