Fermentation tests in clearly defined laboratory conditions were carried out with eight functionally selected strains of Saccharomyces cerevisiae. Analysis of the data showed that there were no significant differences in malic acid production between the strains when the acid was initially present.
The stoichiometry of CO 2 production during the ceric oxidation of various organic acids is measured under conditions with organic acid excess. Measurements utilize a photometric methodology. For anaerobic conditions stoichiometries [CO 2 ] produced : [Ce(IV)] reduced of about 0 (malonic acid), 0.5
