Abstract

Penicillium citrium produces several fructose oligomers, namely kestose, neokestose, nystose, 1‐furanosylnystose and a novel pentasaccharide. The pentasaccharide consists of four fructoses and one glucose but its structure is different from that of 1‐furanosylnystose.
