Mango kernel fat containing 32-37Va palmitic acid and 24-26Yo lauric acid can be prepared by monoesterpolyester reaction with methyl esters of the corresponding fatty acids.The physical and chemical properties of interesterified products are found to be quite different from original mango fat. The modified mango fats may be used as plastic fats for confectionery, bakexy and other edible uses.
