✦ Synopsis
It is, furthermore, possible to separate homologous proteins, that is proteins having the same physiological rBle in different animal species, as can be seen in Table 1. For instance, bovine a-LA can be separated from ovine or caprine u-LA. Likewise, bovine 0-Lg A and p-Lg B can be separated from ovine O-Lg A and ovine p-Lg B, respectively.
As is also shown in Table 1, it is possible to identify cows' milk in ewes' or goats' milk by observing the presence, or otherwise, of peaks of bovine a-LA and fl-Lg A. Ewes' milk can be detected in milk mixtures by the presence of the peak of ovine P-LgB.
Finally, the method can also be applied to wheys from cheeses made from mixtures of cows' and sheeps' milk. In Figure 2 the peak of bovine p-Lg A is indicative of the presence of milk from this species in a cheese made from ovine milk spiked with 10 % of bovine.
In summary, using the proposed method genetic variants of the same animal species and mixtures of milks from different species can be detected by monitoring some of their whey protein peaks.
