Pectic polysaccharide fractions of high molecular weight, resistant to further degradation by pectolytic, hemicellulolytic, and cellulolytic enzymes, were isolated from potato fibre and from pear, carrot, leek, and onion tissue by the liquefaction process. The fractions, referred to as modified hair
