2-position are not limited to the unsaturated acids alone, even though unsaturated acids make up more than 40 '10 of the total acids. Thus the fat departs from the usual palm kernel pattern. The random nature of the fatty acid distribution in the 2-position makes the glyceride structure very complex. Of all the seed fats .examined in this investigation, this oil has the maximum number of glycerides (viz. 88), and no glyceride is present in an amount exceeding 6"/0 (Table 8). The principal glycerides are L a 0 0 5.8"/0, LaLaO 5.4"/0, LaOP 4.8'/0, LaLaP and P O 0 4.5 O / n each and PLaO 4.4 O / o , with many other glycerides in small proportions.
C o n c l u s i o n
The present data offers fresh evidence of the utility of pancreatic lipase hydrolysis as a tool for determining the glyceride structure of natural fats. It also shows that different varieties of fats from the same species can differ, sometimes even substantially, in their component glycerides both quantitatively and qualitatively.
