Abstract
A new lactone having a characteristic sweet and fruity aroma was isolated as a trace component from the juice of Malus × domestica var. Orin. The structure of the lactone was elucidated as 4,8‐dimethylnon‐7‐en‐4‐olide (1) by the spectroscopic evidences and synthesis. The chiral GC analyses of the natural and the synthesized lactones revealed that the R/S ratio of the lactone in the apple juice is 23/77. The odoriferous properties of the both enantiomers are also described. Copyright © 2004 John Wiley & Sons, Ltd.
