Abstract

Highly sensitive inhibition biosensors for amperometric monitoring of benzoic acid (BA), based on the inhibitory effect that this compound exerts on the activity of tyrosinase (PPO) adsorbed on calcium phosphate materials (CaPs), calcium phosphate anhydrous (monetite: CaHPO~4~) and calcium phosphate dihydrate (brushite: CaHPO~4~⋅2H~2~O) are proposed. The PPO/CaHPO~4~ modified glassy carbon electrode showed the best analytical properties for BA detection in aqueous and organic solvents. The biosensor gave a fast response (10 s), a high sensitivity and a low detection limit. This device was suitable applied for benzoic acid detection in a wide variety of samples as cola and sprite drinks, with hydrophilic matrix, and mayonnaise sauce, with hydrophobic matrix.
