## Abstract The effect of exogenous pectinase on the levels of 2,5‐dimethyl‐4‐hydroxy‐2__H__‐furan‐one (DMHF) and DMHF‐glucoside was studied in clarified strawberry juice (__Fragaria__ × __ananassa__, cv. Elsanta). The extent of conversion of DMHF‐malonyl glucoside to DMHF‐glucoside and DMHF was mo
