Subtitled Nutrition and Behauwr, Human Nutrition is the fifth in a series designed to present a comprehensive overview of current knowledge in human nutrition. It is less a textbook than a collection of review articles, each addressing an aspect of what has become a complex and often controversial field. Research linking food intake, nutritional status, and behavior continues to produce conflicting results. This is partly a reflection of the high degree of individual and cross-cultural variability inherent in the study of any human behavior. As such it underscores the complexity of links between behavior and biology. However, it also reflects a history of uneven and unstandardized study design in this field, such that results are often inconclusive and difficult (if not impossible) to compare.

This volume approaches the problem of nutrition and behavior from two points of view. The effects of nutritional deficiency or excess on behavioral outcome are reviewed in the seven chapters in Part I. While some specific
