✦ Synopsis

4 analogs of naturally occurring gallotannins have been synthesized upon acylation of sucrose by 2, 3, 6 and 8 galloyl groups. In a simple test using the DPPH radical, the antioxidant activity of such esters appears proportional to the number of the galloyl units.
