## Abstract Water‐soluble chitosan (WCS) with five different molecular weights was synthesized by N‐acetylation of chitosan with acetic anhydride. Degree of deacetylation of sample was determined by potentiometric titration. The structure of WCS was characterized by FTIR, XRD, and gel permeation ch
