Elaidic acid, C 18 H 34 O 2 , has an essentially linear alkyl chain. The double bond is twisted across the mean direction of the alkyl chain in a skew 0 , trans, skew conformation. In the crystal structure, the molecules form centrosymmetric O-HÁ Á ÁO hydrogen-bonded dimers (OÁ Á ÁO = 2.684 A ˚).
