Abstract

Furaneol®Registered trade mark of Firmenich SA.

[4‐hydroxy‐2,5‐dimethyl‐3(2__H__)‐furanone (1)], a flavour component of pineapple and strawberry, has been prepared by a two‐step synthesis starting with readily available 3‐hexyne‐2,5‐diol.

By the same method 4‐hydroxy‐5‐methyl‐3(2__H__)‐furanone (2) and 2‐ethyl‐4‐hydroxy‐5‐methyl‐3(2__H__)‐furanone (3a) have been prepared from 2‐pentyne‐1,4‐diol and 3‐heptyne‐2,5‐diol, respectively.
