Changes which occurred in the concentrations of free sugars, high-molecular weight carbohydrates (watersoluble carbohydrates, starch, hemicellulose, cellulose), and lignin in 3 differently processed varieties of lima bean have been studied. Samples were boiled, autoclaved or soaked in water and germ
