results in 1962, other workers4 have found that protein made from mature leaves of cocksfoot grass had less BV and TD than protein made from young leaves.
Though comparative work on the effect of leaf age on protein digestibility is still incomplete, the results indicate that in vitro hydrolysis with papain could usefully be used as a preliminary t o in vivo testing, t o estimate the potential NV of a product and to detect proteins damaged during preparation.
The method of separating the two protein fractions by differential heating is crude, but was adopted because it is possible on a technological scale. Further work is in progress on fractions made by more critical methods.
